In our family, dairy-free living isnโt a choice or a trend. Itโs something we navigate every single day because one of my boys has a life-threatening dairy allergy. That means everything I make has to be safe, but it also has to feel normal, filling, and something everyone actually enjoys eating!

I had just finished making Adrian’s birthday cake the weekend before, and then the following weekend it was my uncle’s birthday. I really didn’t want to make another traditional birthday cake, but I also wasn’t quite ready to tackle a homemade ice cream cake. Those have always felt a little intimidating to me.
Then I remembered that years ago my husband’s uncle made an ice cream sandwich cake for a family get-together. It was one of those desserts everyone kept going back for, and I thought, “Why not make a dairy-free version?”
I headed to the commissary on JBLM and found dairy-free ice cream sandwiches and dairy-free CocoWhip. That was all the convincing I needed. Everything came together in just a few minutes, and before long it was sitting in the freezer ready for the party.
The kids absolutely loved it. The adults did too. There weren’t any separate desserts sitting off to the side for Adrian. Everyone grabbed the same cake, and that’s exactly how I like celebrations to be.

Ingredients
Serves 9
- 3 boxes So Delicious Dairy Free Vanilla Bean Coconutmilk Ice Cream Sandwiches
- 2 tubs So Delicious Dairy Free Original CocoWhip
- 16 Oreo cookies
- Hershey’s Simple 5 Chocolate Syrup

Step-by-Step Instructions
Step 1: Make the First Layer
Place 12 dairy-free ice cream sandwiches into the bottom of your 8×11 baking dish.
Arrange them so they cover the bottom as evenly as possible.

Step 2: Crush the Oreos
Add 8 Oreo cookies to a food processor.
Blend until they become fine crumbs.
Step 3: Make the Oreo Layer
Place one tub of CocoWhip into a mixing bowl.
Add the crushed Oreos and stir until fully combined.

Step 4: Spread the Filling
Spread the Oreo CocoWhip mixture over the ice cream sandwiches using an icing spatula.
Make an even layer all the way across.

Step 5: Add the Second Layer
Place another layer of dairy-free ice cream sandwiches on top.

Step 6: Frost the Cake
Spread the second tub of CocoWhip evenly over the top until all of the ice cream sandwiches are covered.

Step 7: Add the Topping
Place the remaining 8 Oreos into the food processor and blend into fine crumbs.
Sprinkle the crumbs evenly over the top.
Drizzle with as much or as little Hershey’s Simple 5 Chocolate Syrup as you’d like.


Step 8: Freeze
Cover the baking dish tightly with plastic wrap.
Freeze until firm.
When you’re ready to serve, remove the cake from the freezer and slice immediately.
