Dairy Free Ice Cream Sandwich Cake!

Equipment

  • 8x11 glass baking dish
  • Food processor
  • Icing spatula
  • Rubber spatula
  • Mixing bowl
  • Spoon
  • Plastic wrap

Ingredients

  • 3 boxes So Delicious Dairy Free Vanilla Bean Coconutmilk Ice Cream Sandwiches
  • 2 tubs So Delicious Dairy Free Original CocoWhip
  • 16 oreo cookies
  • Hershey's Simple 5 Chocolate Syrup

Instructions

  • Arrange 12 dairy-free ice cream sandwiches in the bottom of the baking dish.
  • Blend 8 Oreos into fine crumbs.
  • Mix one tub of CocoWhip with the crushed Oreos.
  • Spread over the first layer of ice cream sandwiches.
  • Add a second layer of ice cream sandwiches.
  • Spread the remaining CocoWhip evenly over the top.
  • Crush the remaining Oreos and sprinkle over the CocoWhip.
  • Drizzle with chocolate syrup.
  • Cover with plastic wrap and freeze for at least 4 hours.
  • Slice immediately after removing from the freezer.

Notes

 

  • Thaw the CocoWhip before spreading.
  • Freeze overnight for the best texture.
  • Store leftovers in the freezer.
