In our family, dairy-free living isnโt a choice or a trend. Itโs something we navigate every single day because one of my boys has a life-threatening dairy allergy. That means everything I make has to be safe, but it also has to feel normal, filling, and something everyone actually enjoys eating!
Thatโs why I care so much about recipes like this one. They make it possible for all of us to enjoy the same food together, without worry.
Some evenings I already know dinner is going to be the last thing I want to think about.
Jujitsu nights are a perfect example. By the time I’ve homeschooled the boys, caught up on the laundry, answered a few emails, run errands, and then packed everyone off to class, we’re all tired, hungry, and more than ready to be home.
Those are exactly the evenings when it would be incredibly easy to swing through a drive-thru on the way back and spend far more money than we planned.
That’s where this freezer meal has become one of my biggest sanity savers.
Before we leave the house, I simply empty the frozen contents of the freezer bag into my slow cooker, pour over the BBQ sauce, pop the lid on, and let it quietly cook while we’re out getting on with life.

Hours later we come home to tender shredded chicken that’s ready to pile into soft buns, spoon over baked potatoes, or tuck into wraps for an easy dinner that everybody happily eats.
I also love that this recipe is made with ingredients we almost always have on hand. Frozen chicken breasts have become one of my favorite things to stock up on whenever they’re on sale at the commissary because I know they’ll turn into several easy family meals like this one.

Ingredients
Serves 4-6
Assemble the Freezer Meal
- 4 frozen boneless, skinless chicken breasts
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
On Cooking Day
- 1 1/2 cups dairy-free BBQ sauce
- 2 tablespoons water
A Few Ingredient Notes:
One of the reasons this recipe has become such a staple in our house is because the ingredient list is wonderfully simple. Everything can be picked up during our normal grocery shop, and almost all of it comes straight from our local commissary.
Frozen chicken breasts are fantastic to keep stocked in the freezer because they work in so many different meals. They’re often one of the best-value proteins available too, especially when you catch them on sale.
For the BBQ sauce, simply choose your family’s favorite brand, but do take a moment to read the ingredient label if you’re cooking for a dairy allergy. Most barbecue sauces are naturally dairy-free, although recipes can change from time to time.
The smoked paprika, garlic powder, and onion powder create a rich, smoky barbecue flavor without needing lots of extra ingredients, making this one of those recipes that’s incredibly easy to throw together whenever you’ve got a few spare minutes.

Step-by-Step Instructions
Step 1: Assemble the Freezer Meal

Lay a gallon-sized freezer bag flat on your work surface.
Add the frozen chicken breasts directly into the bag.
Sprinkle over the smoked paprika, garlic powder, onion powder, salt, and black pepper.
Seal the bag, removing as much air as possible, then gently massage and shake everything together until the seasonings coat the chicken evenly.
Using a permanent marker, write the recipe name and slow cooker cooking instructions on the outside of the bag before placing it into the freezer. Trust me, future you will be very grateful!
Step 2: Freeze
Lay the freezer bag flat in your freezer.
Freezing meals flat helps them stack neatly, saves freezer space, and allows them to freeze more evenly.
Store for up to 3 months.
Step 3: On Day of Cooking Add The Contents of the Freezer Meal Bag to the Slow Cooker

On the morning you want to cook the meal, remove the freezer bag from the freezer.
There’s no need to thaw the chicken first.
Pour the BBQ sauce and water into the bottom of your slow cooker with your frozen chicken, no need to stir.

Pop the lid on and let your slow cooker do the rest.
Step 4: Slow Cook
Cook on:
- LOW for 7-8 hours, or
- HIGH for 4-5 hours
Cooking times can vary slightly depending on your slow cooker and the thickness of your chicken breasts, but the chicken should be fully cooked, tender, and easy to shred before serving.
You can stir the sauce a few times to prevent sticking, if you prefer.
One of the reasons I love this recipe so much is that I don’t need to stand over it. I can get on with homeschooling, errands, or take the boys out for the afternoon knowing dinner is quietly taking care of itself.
Step 5: Shred the Chicken

Once the chicken is cooked through, use two forks to shred it directly in the slow cooker.
If you’re feeding a crowd or simply want to make shredding even easier, remove the chicken to the bowl of a stand mixer and use the paddle attachment on low speed for around 20 to 30 seconds. It’s one of my favourite little kitchen shortcuts!
Return the shredded chicken to the slow cooker and stir it through the BBQ sauce until every bite is coated.
If your family loves extra saucy BBQ chicken, stir through another splash of your favourite dairy-free BBQ sauce before serving.
Step 6: Serve

Pile generous spoonfuls onto soft hamburger buns with dairy-free sliced cheese and serve warm.

Troubleshooting
Chicken that doesn’t shred easily almost always needs a little longer to cook. The collagen in the chicken needs time to break down before it becomes that soft, pull-apart texture everyone’s looking for. If your chicken is still firm when you try to shred it, simply replace the lid and continue cooking for another 30 to 60 minutes before trying again. Large frozen chicken breasts can sometimes take a little longer than smaller ones.
Frozen chicken naturally releases quite a bit of liquid as it cooks, so don’t be surprised if your sauce looks thinner than expected at first. Once you’ve shredded the chicken, leave the lid off the slow cooker for 20 to 30 minutes and stir occasionally. The excess liquid will evaporate and the BBQ sauce will thicken naturally. If your family likes an extra sticky barbecue sauce, stir through another few tablespoons of your favourite dairy-free BBQ sauce just before serving.
Although chicken breasts are naturally lean, they shouldn’t be dry if cooked correctly. The biggest mistake is shredding the chicken and serving it immediately without mixing it back into the cooking juices. After shredding, stir everything together well and let the chicken sit in the sauce for five to ten minutes so it can soak up all that flavour and moisture.
Absolutely. If you’re starting with fresh chicken breasts rather than frozen, simply reduce the cooking time. Cook on LOW for approximately 5 to 6 hours or HIGH for around 3 to 4 hours, depending on the thickness of the chicken. The chicken is ready when it reaches a safe internal temperature and shreds easily with two forks.

- Reheat gently in the microwave, in a saucepan over low heat, or in the slow cooker until piping hot throughout.
- Leftover cooked chicken also freezes beautifully for up to 3 months. Simply thaw overnight in the refrigerator before reheating.
