Lately I’ve become completely obsessed with chia puddings.

I don’t know why it took me so long to jump on the bandwagon because they tick almost every box for our family. They’re packed with fibre, they’re surprisingly filling, I can make them the night before, and somehow they feel much more like dessert than breakfast.

When something is healthy and my boys think they’re getting a treat, I’m definitely counting that as a parenting win.

This raspberry version has quickly become one of my favourites. Frozen raspberries are affordable, easy to keep on hand, and once they’ve thawed and been mashed into the yogurt they create the prettiest bright pink pudding. It feels special without needing lots of expensive ingredients, which is always something I appreciate when I’m feeding a family of five.

Then comes my favourite part. The chocolate topping!

If you’ve ever had one of those chocolate crackle desserts where you tap the top with your spoon and it breaks into little pieces before you dig in, you’ll know exactly what I’m talking about.

That thin layer of dairy-free chocolate hardens in the fridge and adds the most satisfying crunch against the creamy chia pudding underneath. Every spoonful has sweet raspberries, creamy yogurt and little pieces of chocolate all together.

As you can see in the photos below, I simply spread the melted dairy-free chocolate over the chilled pudding before popping it back into the refrigerator to set. It only takes a short while before the chocolate firms up into that delicious crackly topping.

One thing I love about recipes like this is how well they fit into real family life. I can make one for myself, prepare several at once for busy mornings, or even make a batch for the boys if I know we’re heading out early the next day. Having breakfast already waiting in the refrigerator makes hectic mornings feel so much calmer.

Ingredients

Makes 1 large serving

  • 4 oz frozen raspberries, thawed
  • 3/4 cup (117g) dairy-free high-protein yogurt
  • 1 1/2 tablespoons chia seeds
  • 1 tablespoon dairy-free chocolate chips (I used Nestlรฉ Toll House Allergen Free Semi-Sweet Morsels)
  • Optional fresh raspberries for serving


Step-by-Step Instructions

Step 1: Thaw and Mash the Raspberries

Place the frozen raspberries into your serving bowl and allow them to thaw.

Once softened, use a fork to gently mash them into a chunky raspberry mixture. I like leaving a few little pieces intact because they add great texture throughout the pudding.

Step 2: Add the Yogurt

Add the dairy-free high-protein yogurt directly into the bowl with the raspberries.

Stir everything together until the yogurt turns a lovely bright pink and the raspberries are evenly distributed throughout.

This is one of my favourite parts because you can already see how pretty the finished pudding is going to be.

Step 3: Stir in the Chia Seeds

Add the chia seeds and stir really well.

Make sure you scrape around the sides and bottom of the bowl so the seeds are evenly mixed throughout the yogurt.

The chia seeds will begin absorbing moisture almost immediately, so giving everything a thorough mix now helps prevent clumps later.

Step 4: Refrigerate Overnight

Cover the bowl and refrigerate overnight.

By the next morning the chia seeds will have absorbed the liquid, creating a thick, creamy pudding that’s packed with fibre and wonderfully satisfying.

As you can see in the photos, the pudding becomes beautifully thick while still staying creamy.

Step 5: Melt the Chocolate

Place the dairy-free chocolate chips into a microwave-safe bowl.

Microwave for about 30 seconds, stir well, then continue heating in 10-second intervals until completely smooth.

Be patient here because chocolate burns surprisingly quickly.

Melt the dairy-free chocolate chips and smother it over the chilled chia pudding. Then crack it for a delicious chocolate crackling topping!

Step 6: Create the Chocolate Crackling Layer

Pour the melted chocolate onto the centre of the chilled chia pudding.

Using a small spatula or butter knife, gently spread the chocolate across the surface until you’ve created a thin, even layer.

You don’t need perfection here. A rustic finish actually makes the crackly topping even prettier once it sets.

Step 7: Chill Until Firm

Return the pudding to the refrigerator for around 20 to 30 minutes.

The chocolate will harden into a crisp shell that cracks beautifully as you dig your spoon through it into the creamy raspberry chia pudding underneath.

It’s honestly one of the most satisfying desserts…or breakfasts…I’ve made in a long time!

Troubleshooting

My chia pudding is too runny.

Leave it in the refrigerator for a few more hours. Different yogurt brands vary slightly in thickness.

My chia pudding is too thick.

Stir in a splash of dairy-free milk before serving until you reach your preferred consistency.

The chocolate seized.

Microwave in shorter bursts and stir thoroughly between each one. Chocolate burns much faster than most people expect.

The chocolate topping cracked while spreading it.

That’s completely fine! Those little cracks actually become part of the crunchy topping.
