Ingredients

  • 5โ€“6 medium rustic potatoes (about 3 lbs)
  • 4 tbsp vegan butter
  • 1/2 cup unsweetened almond milk (add more as needed)
  • 1/2 cup vegan sour cream
  • 1 tsp seasoning salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Optional for extra flavor:

  • 1/2โ€“1 cup chicken broth (great for extra flavor and creaminess!)

Equipment

  • Large pot
  • Colander
  • Potato masher or hand mixer
  • Measuring cups/spoons

Instructions

1. Prep the potatoes

Wash your potatoes well, peel if desired, and chop them into evenly sized chunks.

2. Boil

Place the potatoes in a large pot and cover with water.

Bring to a boil and cook for about 15โ€“20 minutes, or until fork tender.

3. Drain

Drain the potatoes well and return them to the warm pot for 1โ€“2 minutes to help remove excess moisture.

4. Mash
