Ingredients
Serves 2 to 4
- 4 Corn or flour tortillas
- 2 cups Dairy-free shredded cheese (we love to use Violife Mexican style shreds)
- Spray oil
Step-by-Step Instructions
Step 1: Heat the Pan
Place a skillet or griddle over medium heat and lightly spray with oil.
Step 2: Add the Tortilla
Place one tortilla flat onto the pan.
Step 3: Add the Cheese
Sprinkle a generous amount of dairy-free cheese over one half of the tortilla.

Step 4: Fold
Carefully fold the tortilla over so it forms a half-moon shape.
Step 5: Cook
Cook for a couple of minutes until the bottom is golden.
Flip carefully and cook the other side until golden and the cheese has melted.
Step 6: Serve
Remove from the pan, let it sit for a minute, then slice and serve warm.
