Instructions
Heat a skillet or griddle over medium heat and lightly spray with oil.
Place one tortilla flat onto the pan.
Sprinkle a generous amount of dairy-free cheese over one half of the tortilla. We love using Violife Mexican style shreds for extra melty quesadillas that are delicious and gooey just like the regular kind.
Carefully fold the tortilla over to form a half-moon shape.
Cook for a couple of minutes until the bottom is golden.
Flip carefully and cook the other side until golden and the cheese has melted.
Remove from the pan, let it sit for a minute, then slice and serve warm.
Notes
Use a good quality dairy-free cheese for best results
Medium heat works best to allow the cheese to melt properly
Corn or flour tortillas both work
Storage
Best served fresh, but leftovers can be stored in the fridge for up to 2 days and reheated in a pan.
