For the dough
1cupwarm dairy-free milkalmond, oat, or soy all work well
1/4cupwhite sugar
2 1/4tspactive dry yeast
1large egg
1/4cupdairy-free butter, softened
3 1/2cupsall-purpose flour
3/4tspsalt
For the filling
1/3cupdairy-free butter, softened
1cupbrown sugar
1 1/2tbspcinnamon
For the frosting
1/4cupdairy-free butter, softened
4ozdairy-free cream cheese, softened
3/4cuppowdered sugar
1tspvanilla extract
1-2tbspdairy-free milk to loosen if neededoptional
Instructions
Add the warm dairy-free milk, sugar, and yeast to the bowl of your stand mixer. Stir gently and let it sit for 5 to 10 minutes until foamy. If it does not foam, start again with fresh yeast.
Add the egg and softened dairy-free butter, then add the flour and sprinkle the salt on top. Attach the dough hook and mix on low until a rough dough forms, then increase to medium speed and knead for 6 to 8 minutes until soft, smooth, and elastic. Adjust with a little flour or milk if needed.
Remove the dough, shape into a ball, and place it back into the bowl. Cover and let it rise for 1 hour or until doubled in size.
Roll the dough out on a lightly floured surface into a rectangle about 16 x 10 inches. Spread the dairy-free butter over the surface, then sprinkle over the cinnamon sugar mixture.
Roll the dough tightly into a log and slice into 8 large rolls. Place them into a greased baking dish, cover, and let them rise for 30 to 40 minutes until puffy.
Bake at 350°F for 18 to 25 minutes until golden on top and cooked through.
While the rolls bake, beat together the dairy-free butter and dairy-free cream cheese until smooth. Add powdered sugar and vanilla and mix until creamy, adding a splash of dairy-free milk if needed.
Spread the frosting over the warm cinnamon rolls and serve immediately.
