Ingredients

  • 4 Roma tomatoes, chopped
  • 1 cucumber, sliced
  • 1/4 white onion, thinly sliced
  • Juice of 1–2 limes or lemons (whatever you have on hand)
  • 1 tablespoon olive oil
  • 2 tablespoons of red wine vinegar
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Dried oregano, to taste

Instructions

Step 1: Prep Your Veggies

Wash and chop your Roma tomatoes into bite-sized pieces.

Wash and slice your cucumber.

Thinly slice your white onion.

Step 2: Assemble The Salad

Add the tomatoes, cucumber, and onion to a large mixing bowl.

Squeeze fresh lime or lemon juice over the top.

Add the olive oil, a splash of red wine vinegar, salt, black pepper, garlic powder, and dried oregano.

Step 3: Toss + Serve

Toss everything together until well combined.

Taste and adjust seasoning if needed.

Serve immediately or let it chill in the fridge for a bit before serving for even better flavor.
